Grilled Mediterranean Inspired Chicken

Ingredients

  • 4 lbs skinless chicken breasts
  • 3 tsp paprika
  • tsp nutmeg
  • 1 healthy sprinkle salt
  • 1 healthy sprinkle freshly cracked pepper
  • 4 large lemons (juice and zest of 2)
  • 10–12 cloves garlic (minced)
  • ¼ cup fresh parsley or dill
  • 1 cup olive oil

Instructions

  1. Combine paprika, nutmeg, salt, pepper, minced garlic, lemon juice and zest, olive oil, and parsley/dill in a deep bowl.
  2. Add the chicken to the marinade, ensuring it is completely coated. Cover and refrigerate for 2-4 hours or overnight.
  3. Preheat the grill to 375 degrees and lightly oil the grates.
  4. Cook the chicken for a few minutes per side until charred, then finish on indirect heat until the internal temperature reaches at least 165 degrees.
  5. Let the chicken rest, then squeeze fresh lemon or lime juice over it and garnish with fresh herbs.
