Grilled Mediterranean Inspired Chicken

Instructions
- Combine paprika, nutmeg, salt, pepper, minced garlic, lemon juice and zest, olive oil, and parsley/dill in a deep bowl.
- Add the chicken to the marinade, ensuring it is completely coated. Cover and refrigerate for 2-4 hours or overnight.
- Preheat the grill to 375 degrees and lightly oil the grates.
- Cook the chicken for a few minutes per side until charred, then finish on indirect heat until the internal temperature reaches at least 165 degrees.
- Let the chicken rest, then squeeze fresh lemon or lime juice over it and garnish with fresh herbs.
