Lobster Ravioli Sauce

Ingredients

  • 2 Tbsp salted butter
  • 1 large shallot, minced
  • 2 large cloves garlic, minced
  • tsp freshly ground black pepper
  • ¼ cup heavy cream
  • tsp fine sea salt
  • ¼ cup hot pasta water
  • to taste flat leaf parsley, chopped or chiffonade
  • for serving lemon wedges, optional

Instructions

  1. 1. Boil a large pot of salted water for the ravioli.
  2. 2. Melt butter in a medium saucepan over medium heat; add shallot and sauté until translucent.
  3. 3. Add garlic and pepper, sauté for one more minute without burning the garlic.
  4. 4. Cook the ravioli in the boiling salted water.
  5. 5. Pour in the heavy cream and salt, bring to a simmer, then reduce heat.
  6. 6. Simmer for about two minutes, then add hot pasta water and stir well.
  7. 7. Arrange the ravioli in a bowl, pour sauce on top, and garnish with parsley.
  8. 8. Serve immediately with lemon wedges.
