Ingredients

The filling

  • 3 pieces shiitake mushrooms, dried or fresh
  • 8 oz ground chicken
  • 2 stalks scallions, finely chopped
  • 55 pieces wonton wrappers
  • water for boiling wontons

Seasonings

  • 1 tablespoon Chinese Shaoxing cooking wine
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 tablespoon sesame oil
  • ¼ teaspoon ground white pepper

Soup base

  • ½ teaspoon chicken bouillon powder
  • salt to taste
  • white pepper to taste
  • sesame oil to taste
  • 3 cups boiling water

Instructions

  1. Soak dried shiitake mushrooms in water for 20 minutes, then dice them after squeezing out excess water.
  2. Combine diced mushrooms, ground chicken, and chopped scallions in a bowl with seasonings and marinate for 30 minutes.
  3. Wrap one teaspoon of filling in each wonton wrapper, sealing tightly.
  4. Prepare the soup base by mixing chicken bouillon powder, salt, white pepper, and sesame oil with boiling water.
  5. Boil the wontons in a separate pot until they float, then drain and transfer them to the soup.
