Homemade Wonton Soup

The Broth

chicken broth

toasted sesame oil

Instructions
- Combine all wonton ingredients (except wrappers and milk) in a bowl and mix well.
- Lay wonton wrappers on a work surface and place about ½ tsp of stuffing in the center of each.
- Brush edges with milk and fold the wrappers in half, pressing to seal and removing air.
- Crimp the top edge and bring the corners together, pressing to stick.
- Repeat until all wontons are made, keeping them covered with a damp cloth.
- Cook the wontons immediately or store them in airtight containers for later use.
- For the broth, combine chicken stock, water, sesame oil, honey, rice vinegar, garlic, and ginger in a pot.
- Bruise the lemongrass and add it to the stock, then bring to a boil and simmer for 10 minutes.
- Remove ginger, garlic, and lemongrass, then bring the broth back to a boil.
- Add wontons to the boiling broth, cooking for 2-3 minutes for fresh or 6-8 minutes for frozen.
- Serve garnished with chopped green onions.
