Homemade Wonton Soup

Ingredients

The Wontons

  • 200 g ground pork or ground chicken
  • 200 g finely chopped raw shrimp
  • 1 piece green onion, finely chopped
  • 1 tsp minced fresh ginger
  • 2 tbsp toasted sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp unseasoned rice vinegar
  • 1 tbsp unpasteurized honey
  • ½ tsp sambal oelek (optional)
  • ¼ tsp salt
  • 60 pieces wonton wrappers
  • 2-3 tbsp milk or water or egg whites

The Broth

  • 4 cups chicken broth
  • 2 cups water
  • 2 tbsp toasted sesame oil
  • 1 tsp unpasteurized honey
  • 1 tsp unseasoned rice vinegar
  • 2 cloves garlic, peeled
  • 2 thick slices fresh ginger
  • 1 stalk lemongrass

To Serve

  • to taste finely chopped green onions

Instructions

  1. Combine all wonton ingredients (except wrappers and milk) in a bowl and mix well.
  2. Lay wonton wrappers on a work surface and place about ½ tsp of stuffing in the center of each.
  3. Brush edges with milk and fold the wrappers in half, pressing to seal and removing air.
  4. Crimp the top edge and bring the corners together, pressing to stick.
  5. Repeat until all wontons are made, keeping them covered with a damp cloth.
  6. Cook the wontons immediately or store them in airtight containers for later use.
  7. For the broth, combine chicken stock, water, sesame oil, honey, rice vinegar, garlic, and ginger in a pot.
  8. Bruise the lemongrass and add it to the stock, then bring to a boil and simmer for 10 minutes.
  9. Remove ginger, garlic, and lemongrass, then bring the broth back to a boil.
  10. Add wontons to the boiling broth, cooking for 2-3 minutes for fresh or 6-8 minutes for frozen.
  11. Serve garnished with chopped green onions.
