15 Minute Wonton Soup

Ingredients

The broth

  • 1 unit leek, white parts, thinly sliced
  • 4 slices ginger
  • 1 tablespoon olive oil
  • 4 cups chicken broth (or veggie broth)
  • salt to taste
  • lemon juice to taste

The wontons and greens

  • 10–14 unit wontons (chicken, shrimp or vegetarian)
  • a couple handful chopped greens (baby spinach, arugula, bok choy, chopped kale)

Garnishes

  • to taste scallions
  • to taste cilantro
  • to taste sesame seeds
  • to taste chili flakes or sriracha

Instructions

  1. Sauté the leeks and ginger in olive oil over medium heat until fragrant.
  2. Add the broth, cover, and bring to a boil.
  3. Add the wontons and simmer according to package directions until cooked.
  4. Taste the broth and adjust seasoning with salt and lemon juice.
  5. Add the greens and cook until wilted.
  6. Serve in bowls and garnish as desired.
