Instructions
- Separate the bok choy leaves from the stems and slice them.
- Heat the olive oil in a medium pot over medium-high heat.
- Add the garlic and turmeric to the pot, stirring until fragrant.
- Add the bok choy stems and season with salt and pepper, cooking until they soften.
- Stir in the bok choy leaves and the cold water, then bring to a boil.
- Once boiling, turn off the heat and add fresh lemon juice before serving.
