15 Minute Bok Choy Soup

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 lb baby bok choy
  • 4 cloves garlic
  • ½ tsp dried turmeric
  • 3 cups cold water
  • 1 squish fresh lemon juice
  • to taste salt
  • to taste pepper

Instructions

  1. Separate the bok choy leaves from the stems and slice them.
  2. Heat the olive oil in a medium pot over medium-high heat.
  3. Add the garlic and turmeric to the pot, stirring until fragrant.
  4. Add the bok choy stems and season with salt and pepper, cooking until they soften.
  5. Stir in the bok choy leaves and the cold water, then bring to a boil.
  6. Once boiling, turn off the heat and add fresh lemon juice before serving.
