Stir-Fried Bok Choy With Garlic

Ingredients

  • 1 Tbsp. vegetable oil
  • 2 cloves garlic
  • 1 shallot
  • 1 lb. baby bok choy
  • 1 Tbsp. reduced-sodium soy sauce
  • 2 Tbsp. water

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add chopped garlic and shallot, cooking until fragrant.
  3. Add rinsed and quartered baby bok choy, soy sauce, and water; cover immediately.
  4. Cook bok choy for 1 minute, then uncover and toss.
  5. Return cover and cook until bok choy is tender at the core, about 3 minutes longer.
