Garlic Mushroom Bok Choy

Ingredients

  • tablespoons oil
  • 3 cloves garlic, minced
  • 4 oz shiitake mushrooms, stem removed and sliced
  • 10 oz bok choy, rinsed and drained
  • ¼ teaspoon salt, or to taste

Instructions

  1. Rinse the bok choy with cold water and drain it. Remove the lower part of the bok choy stems and slice the larger leaves lengthwise in half.
  2. Heat a wok or pan over high heat and add the oil.
  3. Once the oil is heated, add the garlic and stir-fry until aromatic.
  4. Add the mushrooms and stir for a few moments before adding the bok choy.
  5. Add salt and continue to stir-fry until the bok choy leaves are wilted and the stems remain crisp.
  6. Turn off the heat and serve immediately.
