Instructions
- 1. Slice the bottoms off the baby bok choy.
- 2. Cut the bok choy into lengthwise strips about ½-inch wide.
- 3. In a small bowl, mix the fish sauce, sesame oil, and arrowroot to create a paste-like slurry.
- 4. Heat olive oil in a 9-inch skillet over medium heat until hot.
- 5. Add the bok choy and salt to the skillet, cooking and tossing until slightly wilted.
- 6. Stir in the scallions, ginger, and garlic, cooking until fragrant.
- 7. Add the sauce mixture and quickly mix with the vegetables until thickened.
- 8. Serve immediately while hot.
