Ingredients

The vegetables

  • pounds baby bok choy
  • 10 pieces scallions, finely sliced
  • 2 large cloves garlic, thinly sliced
  • inch piece ginger, thinly sliced

The sauce

  • 1 tablespoon fish sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon arrowroot powder

The cooking ingredients

  • 2 tablespoons olive oil
  • ½ teaspoon celtic sea salt

Instructions

  1. 1. Slice the bottoms off the baby bok choy.
  2. 2. Cut the bok choy into lengthwise strips about ½-inch wide.
  3. 3. In a small bowl, mix the fish sauce, sesame oil, and arrowroot to create a paste-like slurry.
  4. 4. Heat olive oil in a 9-inch skillet over medium heat until hot.
  5. 5. Add the bok choy and salt to the skillet, cooking and tossing until slightly wilted.
  6. 6. Stir in the scallions, ginger, and garlic, cooking until fragrant.
  7. 7. Add the sauce mixture and quickly mix with the vegetables until thickened.
  8. 8. Serve immediately while hot.
