Sautéed Baby Bok Choy

Ingredients

The bok choy

  • 1 pound baby bok choy

The sauce

  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon water
  • ½ tablespoon rice vinegar
  • 1 teaspoon mirin or honey
  • ¼ teaspoon toasted sesame oil
  • 1 clove garlic, chopped
  • to taste red pepper flakes

The cooking oil

  • 2 teaspoons avocado oil

The garnish

  • to taste sesame seeds

Instructions

  1. Wash the bok choy thoroughly to remove grit.
  2. Cut the bok choy in half or quarter it depending on size.
  3. In a small bowl, mix together the tamari, water, rice vinegar, mirin, sesame oil, garlic, and red pepper flakes.
  4. Heat avocado oil in a skillet over medium-high heat.
  5. Add half of the bok choy cut side down and sear for 1 to 2 minutes on each side until browned.
  6. Remove the cooked bok choy and repeat with the remaining half.
  7. Return all bok choy to the pan, add the sauce, toss, cover, and cook for an additional 1 to 2 minutes until tender.
  8. Transfer to a platter, sprinkle with sesame seeds, and serve.
