Sautéed Baby Bok Choy

Instructions
- Wash the bok choy thoroughly to remove grit.
- Cut the bok choy in half or quarter it depending on size.
- In a small bowl, mix together the tamari, water, rice vinegar, mirin, sesame oil, garlic, and red pepper flakes.
- Heat avocado oil in a skillet over medium-high heat.
- Add half of the bok choy cut side down and sear for 1 to 2 minutes on each side until browned.
- Remove the cooked bok choy and repeat with the remaining half.
- Return all bok choy to the pan, add the sauce, toss, cover, and cook for an additional 1 to 2 minutes until tender.
- Transfer to a platter, sprinkle with sesame seeds, and serve.
