Reuben Tacos

flour taco tortillas

Russian dressing

leftover corned beef, diced

shredded Swiss cheese

sauerkraut, drained well

fresh dill, for garnish
Instructions
- Combine all ingredients for the Russian dressing in a small bowl and stir until well mixed. Chill until ready to serve.
- Preheat the oven to 350°F and lay the tortillas flat on a baking sheet.
- Spread about 2 tablespoons of Russian dressing down the center of each tortilla.
- Top each tortilla with equal amounts of corned beef and shredded Swiss cheese.
- Bake in the preheated oven for 5 to 8 minutes until heated through and cheese is melted.
- Remove from the oven and top with sauerkraut and a pinch of fresh dill if desired. Serve warm.
