Reuben Sandwich

Ingredients

  • 8 slices rye bread
  • ¾ cup Thousand Island salad dressing
  • 8 slices Swiss cheese
  • 1 pound sauerkraut
  • pounds corned beef
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 200°F and prepare a baking sheet with a wire rack.
  2. Lay out 4 slices of rye bread and spread 1 tablespoon of dressing on each.
  3. Layer Swiss cheese, sauerkraut, more dressing, corned beef, another slice of cheese, and top with another tablespoon of dressing.
  4. Cover with the remaining slices of bread and press down gently.
  5. Brush the tops of two sandwiches with melted butter and place them butter-side down in a skillet.
  6. Place a heavy pot on top and cook over medium-low heat for about 5 minutes until golden brown.
  7. Remove the pot, brush the tops with butter, flip the sandwiches, and cook for another 5 minutes.
  8. Transfer the sandwiches to the baking sheet in the oven to keep warm and repeat with the remaining sandwiches.
