Instructions
- Preheat the oven to 200°F and prepare a baking sheet with a wire rack.
- Lay out 4 slices of rye bread and spread 1 tablespoon of dressing on each.
- Layer Swiss cheese, sauerkraut, more dressing, corned beef, another slice of cheese, and top with another tablespoon of dressing.
- Cover with the remaining slices of bread and press down gently.
- Brush the tops of two sandwiches with melted butter and place them butter-side down in a skillet.
- Place a heavy pot on top and cook over medium-low heat for about 5 minutes until golden brown.
- Remove the pot, brush the tops with butter, flip the sandwiches, and cook for another 5 minutes.
- Transfer the sandwiches to the baking sheet in the oven to keep warm and repeat with the remaining sandwiches.
