Ingredients

  • 8 slices rye bread
  • ¾ cup Thousand Island salad dressing
  • 8 slices Swiss cheese
  • 1 pound sauerkraut, drained and squeezed of extra moisture
  • pounds deli turkey, thinly sliced
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 200 degrees and prepare a baking sheet with a wire rack.
  2. Lay out 4 slices of rye bread and spread 1 tablespoon of dressing on each slice.
  3. Layer Swiss cheese, sauerkraut, more dressing, turkey, another slice of cheese, and dressing on top.
  4. Top with another slice of bread and press down gently.
  5. Brush the tops of two sandwiches with melted butter and place them butter-side down in a skillet.
  6. Place a heavy pot on top to press the sandwiches while cooking.
  7. Cook for about 5 minutes until golden brown, then remove the pot and brush with butter.
  8. Flip the sandwiches, replace the pot, and cook the other side for another 5 minutes.
  9. Transfer the sandwiches to the oven to keep warm while cooking the remaining sandwiches.
