Southwest Steak Salad

Ingredients

Dressing

  • ½ avocado ripe avocado, peeled, pitted and chopped
  • ¼ cup nonfat plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons water
  • ½ teaspoon minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Salad

  • 1 lb raw lean, trimmed flank steak, cut into thin strips
  • 5 teaspoons southwest seasoning
  • 1 tablespoon canola oil
  • 1 teaspoon canola oil
  • ½ cup frozen corn kernels
  • ½ cup canned black beans, drained and rinsed
  • ½ cup chopped grape or cherry tomatoes
  • 1 clove garlic, minced
  • lime lime
  • 12 cups lettuce, torn
  • 8 tablespoons tortilla strips

Instructions

  1. Blend the dressing ingredients in a blender until smooth.
  2. Coat the steak strips with southwest seasoning in a zip-top bag.
  3. Heat one tablespoon of oil in a skillet and cook the seasoned steak for about 5 minutes.
  4. Remove the steak and add the remaining oil to the skillet, then cook the corn and black beans for 1-2 minutes.
  5. Add tomatoes and garlic, cook for another minute, and squeeze lime juice over the mixture.
  6. Assemble each salad with lettuce, steak, corn and bean mixture, tortilla strips, and dressing.
