Instructions
- Blend the dressing ingredients in a blender until smooth.
- Coat the steak strips with southwest seasoning in a zip-top bag.
- Heat one tablespoon of oil in a skillet and cook the seasoned steak for about 5 minutes.
- Remove the steak and add the remaining oil to the skillet, then cook the corn and black beans for 1-2 minutes.
- Add tomatoes and garlic, cook for another minute, and squeeze lime juice over the mixture.
- Assemble each salad with lettuce, steak, corn and bean mixture, tortilla strips, and dressing.
