Grilled Pork Kebabs with Peanut Sauce

The Kebabs
-

boneless, thick-cut pork chops

red onion

bell pepper

zucchini or yellow squash

olive oil or avocado oil
Instructions
- Preheat the grill to medium-high heat.
- Make the peanut sauce by whisking or blending all the sauce ingredients together. Set aside half for serving.
- Marinate the pork cubes in half of the peanut sauce while preparing the vegetables.
- Cut the vegetables into roughly 1-inch pieces.
- Thread the pork and vegetables onto skewers, alternating them.
- Brush the vegetables with oil and place the kebabs on the grill.
- Cook for 3-4 minutes per side until the pork reaches 145℉ and the vegetables are tender.
- Let the kebabs rest for 3-5 minutes before serving with the reserved peanut sauce.
