Grilled Pork Kebabs with Peanut Sauce

Ingredients

The Sauce

  • ¼ cup creamy peanut butter
  • cup orange juice
  • 1 Tbsp lime juice
  • ¼ cup coconut aminos
  • 4 Tbsp rice vinegar
  • ¾ tsp freshly grated ginger
  • 1 clove garlic, peeled and minced
  • ¼ – ½ tsp crushed red pepper flakes
  • to taste salt

The Kebabs

  • 1 lb boneless, thick-cut pork chops
  • ½ small red onion
  • 1 medium bell pepper
  • 1 medium zucchini or yellow squash
  • 1 tsp olive oil or avocado oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Make the peanut sauce by whisking or blending all the sauce ingredients together. Set aside half for serving.
  3. Marinate the pork cubes in half of the peanut sauce while preparing the vegetables.
  4. Cut the vegetables into roughly 1-inch pieces.
  5. Thread the pork and vegetables onto skewers, alternating them.
  6. Brush the vegetables with oil and place the kebabs on the grill.
  7. Cook for 3-4 minutes per side until the pork reaches 145℉ and the vegetables are tender.
  8. Let the kebabs rest for 3-5 minutes before serving with the reserved peanut sauce.
