Pineapple Pork Kebabs

Ingredients

Marinade

  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 Tbsp soy sauce
  • 2 Tbsp cooking oil
  • 1 Tbsp honey

Kebabs

  • lbs. boneless pork chops
  • 1 medium Vidalia onion
  • 1 medium green bell pepper
  • 1 20oz. can pineapple chunks (packed in juice)
  • 1 Tbsp cooking oil
  • to taste salt and pepper

Toppings (optional)

  • ½ bunch cilantro
  • to taste Sriracha

Instructions

  1. Soak wooden or bamboo skewers in water for at least 30 minutes.
  2. Prepare the marinade by mixing minced garlic, grated ginger, soy sauce, cooking oil, and honey in a bowl.
  3. Cut pork chops into 1-inch cubes and coat them with the marinade. Refrigerate for at least 30 minutes.
  4. Cut onion and bell pepper into 1-inch pieces, toss with oil, salt, and pepper.
  5. Thread soaked skewers with alternating pieces of onion, bell pepper, pineapple, and pork.
  6. Preheat the broiler on high for at least five minutes and adjust the oven rack to 5-6 inches from the broiler.
  7. Broil the skewers for 5 minutes, rotate, and continue broiling, rotating until evenly browned, about 15 minutes total.
  8. Optional: Top with chopped cilantro and Sriracha before serving.
