Marinated Pork & Pineapple Kabobs

Ingredients

The Marinade

  • 1 cup chopped pineapple chunks
  • 4 tablespoons olive oil
  • 2 cloves garlic (minced)
  • ½ jalapeno (minced)
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt

The Kabobs

  • pounds pork tenderloin (cut into 1" to 1½" chunks)
  • ½ fresh pineapple (cut into 1" to 1½" chunks)

Instructions

  1. Puree the pineapple chunks, olive oil, garlic, jalapeno, cumin, oregano, and salt until smooth.
  2. Place the pork and remaining pineapple chunks in a zip lock bag, pour in the marinade, and refrigerate for a few hours.
  3. Preheat the grill to medium-high heat (around 425°F).
  4. Thread the pork and pineapple onto skewers in alternating order.
  5. Grill the kabobs for 5 to 6 minutes per side until the pork is cooked through.
