Instructions
- 1. In a food processor, combine coconut flour, salt, and baking soda.
- 2. Add eggs, honey, palm shortening, lemon zest, and poppy seeds to the mixture and pulse until combined.
- 3. Spoon the batter into a mini muffin pan lined with mini muffin liners, using about 1 tablespoon for each muffin.
- 4. Bake in a preheated oven at 350°F for 8-12 minutes.
- 5. Allow muffins to cool for 1 hour before serving.
