Ingredients

  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 3 large eggs
  • ¼ cup honey
  • ¼ cup palm shortening
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds

Instructions

  1. 1. In a food processor, combine coconut flour, salt, and baking soda.
  2. 2. Add eggs, honey, palm shortening, lemon zest, and poppy seeds to the mixture and pulse until combined.
  3. 3. Spoon the batter into a mini muffin pan lined with mini muffin liners, using about 1 tablespoon for each muffin.
  4. 4. Bake in a preheated oven at 350°F for 8-12 minutes.
  5. 5. Allow muffins to cool for 1 hour before serving.
