Instructions
- 1. Combine coconut flour, salt, and baking soda in a medium bowl.
- 2. In a large bowl, blend together eggs, agave nectar, grapeseed oil, and lemon zest.
- 3. Mix the dry ingredients into the wet mixture.
- 4. Fold in the poppy seeds.
- 5. Spoon 1 tablespoon of batter into each greased mini muffin cup.
- 6. Bake at 350°F for 8 to 10 minutes.
