Ingredients

The chicken

The coating

  • ¼ cup cornmeal
  • 1 cup panko breadcrumbs
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon smoked paprika

The cooking fat

  • 4 tablespoons butter

Optional garnish

Instructions

  1. Marinate the chicken tenders in buttermilk for at least 30 minutes or up to 8 hours.
  2. Preheat the oven to 425°F and place an empty sheet pan in the oven for 10 minutes.
  3. Mix flour, cornmeal, panko breadcrumbs, salt, pepper, onion powder, garlic powder, and smoked paprika on a large plate.
  4. Coat each chicken tender in the flour mixture, ensuring even coverage.
  5. Remove the hot sheet pan from the oven, add melted butter, and swirl to coat the bottom.
  6. Place the chicken in a single layer on the buttered pan and bake for 10 minutes.
  7. Flip the chicken and bake for an additional 8 minutes.
  8. Broil for 2-3 minutes until the tops are crispy.
  9. Serve immediately, garnished with parsley if desired.
