Baked Chicken Tenders

Instructions
- Preheat the oven to 425°F and coat a sheet pan with cooking spray.
- In a medium bowl, combine flour, 1 ½ teaspoons salt, and ½ teaspoon pepper.
- In another bowl, whisk the eggs with 2 tablespoons of water until smooth.
- In a third bowl, mix Italian breadcrumbs, panko breadcrumbs, parmesan cheese, and additional salt and pepper to taste.
- Dip each chicken tender in the flour mixture, then in the egg, and finally coat in the breadcrumb mixture.
- Arrange the coated chicken tenders in a single layer on the prepared sheet pan.
- Drizzle melted butter over the tenders and spray with cooking spray.
- Bake for 15-17 minutes until the coating is golden brown and the chicken is cooked through. Optionally, broil for an additional 2-3 minutes for a darker coating.
- Serve immediately.
