Ingredients

The chicken tenders

  • 1 ¼ pounds raw chicken tenders

The coating

  • ½ cup flour
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 2 large eggs
  • ¾ cup Italian breadcrumbs
  • 1 cup panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 3 tablespoons butter
  • to taste cooking spray

Instructions

  1. Preheat the oven to 425°F and coat a sheet pan with cooking spray.
  2. In a medium bowl, combine flour, 1 ½ teaspoons salt, and ½ teaspoon pepper.
  3. In another bowl, whisk the eggs with 2 tablespoons of water until smooth.
  4. In a third bowl, mix Italian breadcrumbs, panko breadcrumbs, parmesan cheese, and additional salt and pepper to taste.
  5. Dip each chicken tender in the flour mixture, then in the egg, and finally coat in the breadcrumb mixture.
  6. Arrange the coated chicken tenders in a single layer on the prepared sheet pan.
  7. Drizzle melted butter over the tenders and spray with cooking spray.
  8. Bake for 15-17 minutes until the coating is golden brown and the chicken is cooked through. Optionally, broil for an additional 2-3 minutes for a darker coating.
  9. Serve immediately.
