Ingredients

The breading

  • cup all-purpose flour
  • 2 large eggs
  • 1⅓ cups panko bread crumbs
  • cup finely shredded parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Tbsp olive oil

The chicken

  • 2 lbs. chicken tenders
  • to taste Salt
  • to taste freshly ground black pepper
  • 1 Tbsp minced fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F and prepare a wire rack over a baking sheet.
  2. Set up three shallow dishes: one with flour, one with whisked eggs, and one with a mixture of panko, parmesan, Italian seasoning, paprika, and garlic powder, drizzled with olive oil.
  3. Season the chicken tenders with salt and pepper.
  4. Dredge each chicken tender in flour, then dip in egg, and finally coat with the panko mixture, pressing to adhere.
  5. Place the coated chicken tenders on the wire rack with space between them.
  6. Bake for 15 to 20 minutes until cooked through, checking that the internal temperature reaches 165°F.
  7. Garnish with parsley if desired and serve warm with dipping sauces.
