Ingredients

The chicken tenders

  • 1.25 lbs raw boneless skinless chicken breast tenderloins
  • 2 large egg whites

The coating

  • 4 teaspoons flour
  • ½ teaspoon paprika
  • ½ cup cornflake crumbs
  • ½ teaspoon dried parsley flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
  2. Mix flour and paprika in a small dish.
  3. Place chicken strips in a Ziploc bag with the flour mixture, seal, and shake to coat.
  4. Beat the egg whites in a shallow dish and set aside.
  5. In another shallow dish, combine cornflake crumbs, parsley, salt, pepper, cayenne, onion powder, and garlic powder.
  6. Coat each flour-coated chicken strip in egg whites, then press into the cornflake mixture to coat both sides.
  7. Transfer the coated strips to the baking sheet, spray with cooking spray, and bake for 18-20 minutes until cooked through.
