Ingredients

The chicken

  • 1 lb chicken tenderloins

The egg wash mixture

  • 1 whole egg
  • 1 tsp dijon mustard
  • 1 tsp Worcestershire sauce
  • to taste salt and pepper

The breadcrumb mixture

  • 1 cup whole wheat panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 2 Tbsp flaxseed meal
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ¼ tsp onion powder

Instructions

  1. Preheat the oven to 400°F.
  2. In one bowl, whisk together the egg, dijon mustard, Worcestershire sauce, salt, and pepper.
  3. In another bowl, mix the breadcrumbs, parmesan cheese, flaxseed meal, and other seasonings.
  4. Dip the chicken in the egg wash, then coat with the breadcrumb mixture, pressing lightly.
  5. Place the coated chicken on a baking sheet with a wire rack or parchment paper.
  6. Lightly spray the tops with cooking spray and bake for about 20 minutes, flipping halfway through.
  7. Serve immediately with your favorite dipping sauce.
