Ingredients

The chicken tenders

  • 2 lb chicken tenders

The coating

  • ¾ cup panko breadcrumbs
  • ¼ cup white whole wheat flour
  • 1 tablespoon garlic powder
  • 2 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 large eggs

The honey mustard sauce

  • 3 tablespoon stone-ground mustard
  • 3 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 squeeze lemon juice
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Preheat the oven to 450ºF and prepare a baking rack on a baking sheet.
  2. Mix panko breadcrumbs, flour, garlic powder, Italian seasoning, red pepper flakes, salt, and pepper in a bowl.
  3. Whisk the eggs in a separate bowl.
  4. Dip each chicken tender in the egg wash, then coat in the breadcrumb mixture.
  5. Place the coated chicken tenders on the baking rack.
  6. Bake for 20 minutes, flipping them halfway through.
  7. Meanwhile, whisk together the honey mustard sauce ingredients.
  8. Serve the chicken tenders with the honey mustard sauce.
