Ingredients

The chicken

  • 2 pounds chicken mix of boneless and bone-in pieces
  • 1 cup buttermilk
  • 1 teaspoon salt
  • ½ teaspoon pepper

The breading

  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 180C/350F and prepare a baking sheet with parchment paper and cooking spray.
  2. In a mixing bowl, combine the chicken, buttermilk, salt, and pepper, and let it marinate for 10 minutes.
  3. In another bowl, mix the flour, cornstarch, salt, pepper, and smoked paprika.
  4. Using tongs, remove the chicken from the buttermilk, letting excess drip off, and coat it in the breading mixture.
  5. Place the breaded chicken on the prepared baking sheet, spray with cooking spray, and bake for 30-35 minutes, flipping halfway through.
  6. Ensure the chicken reaches an internal temperature of 165F before serving.
