Instructions
- 1. Season the chicken with salt, paprika, poultry seasoning, garlic powder, and black pepper in a medium bowl.
- 2. Pour buttermilk and lemon juice over the chicken and refrigerate for 6 to 8 hours, preferably overnight.
- 3. Preheat the oven to 400°F and prepare a baking sheet with a rack sprayed lightly with oil.
- 4. In a shallow bowl, mix panko, cornflake crumbs, Parmesan, salt, parsley, paprika, onion powder, garlic powder, and chili powder for the coating.
- 5. Remove chicken from buttermilk and dredge in the crumb mixture, placing on the prepared baking sheet.
- 6. Spray the tops of the chicken with cooking spray.
- 7. Bake until golden brown and cooked through, about 40-45 minutes.
