Ingredients

The Chicken

  • 8 pieces chicken drumsticks
  • ½ teaspoon kosher salt
  • ½ teaspoon sweet paprika
  • ½ teaspoon poultry seasoning
  • ¼ teaspoon garlic powder
  • teaspoon freshly ground black pepper
  • 1 cup buttermilk
  • Juice of ½ lemon lemon juice
  • as needed spray cooking spray

The Coating

  • cup panko bread crumbs
  • ½ cup crushed cornflake crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon dried parsley
  • 1 ½ teaspoons sweet paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. 1. Season the chicken with salt, paprika, poultry seasoning, garlic powder, and black pepper in a medium bowl.
  2. 2. Pour buttermilk and lemon juice over the chicken and refrigerate for 6 to 8 hours, preferably overnight.
  3. 3. Preheat the oven to 400°F and prepare a baking sheet with a rack sprayed lightly with oil.
  4. 4. In a shallow bowl, mix panko, cornflake crumbs, Parmesan, salt, parsley, paprika, onion powder, garlic powder, and chili powder for the coating.
  5. 5. Remove chicken from buttermilk and dredge in the crumb mixture, placing on the prepared baking sheet.
  6. 6. Spray the tops of the chicken with cooking spray.
  7. 7. Bake until golden brown and cooked through, about 40-45 minutes.
