Ingredients

The chicken

  • 2 ½ pounds chicken (one whole chicken cut into pieces)
  • 1 ½ cups buttermilk
  • 1 teaspoon table salt
  • ½ teaspoon black pepper

The breading

  • 1 ½ cups all-purpose flour
  • ¾ cup cornstarch
  • 1 ½ teaspoons table salt
  • ¾ teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Cut the whole chicken into pieces or use precut pieces.
  2. Preheat the oven to 350°F and line a baking sheet with aluminum foil or parchment paper, placing a wire rack on top.
  3. In a large mixing bowl, combine the chicken, buttermilk, salt, and pepper, and let it sit for 15 minutes.
  4. In another bowl, whisk together the flour, cornstarch, salt, pepper, and paprika.
  5. Remove the chicken from the marinade, letting excess buttermilk drain, and coat it in the breading mixture.
  6. Place the breaded chicken on the wire rack and spray each piece with cooking spray.
  7. Bake the chicken in the preheated oven for 45-60 minutes, turning halfway through and spraying again.
  8. Ensure the chicken reaches an internal temperature of at least 165°F and is golden brown before removing from the oven.
