Ingredients

The chicken

  • 2 pounds chicken breasts (bone in, skinless)

The marinade

  • cups buttermilk

The coating

  • 1 cup whole-wheat panko breadcrumbs
  • cup Parmesan cheese (freshly grated)
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper

For cooking

  • as needed none cooking spray

Instructions

  1. Marinate the chicken in buttermilk for 2 to 24 hours in the refrigerator.
  2. Preheat the oven to 400°F and prepare a wire rack on a baking sheet with cooking spray.
  3. Mix the breadcrumbs, Parmesan cheese, and spices in a shallow bowl.
  4. Remove chicken from buttermilk, shake off excess, and coat in breadcrumb mixture.
  5. Place coated chicken on the wire rack and spray generously with cooking spray.
  6. Bake until golden brown and cooked through, about 35 to 45 minutes.
