Ingredients

The coating

  • 2 cups Panko bread crumbs
  • 2 Tbsp olive oil
  • 1 tsp paprika
  • ½ tsp dried thyme
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • to taste salt and freshly ground black pepper

The chicken

  • 3 large egg whites
  • 8 (5 - 6 oz each) bone-in, skinless chicken thighs

Instructions

  1. Preheat the oven to 400°F and prepare a wire rack over a baking sheet with non-stick spray.
  2. In a bowl, combine Panko with olive oil and mix until moistened.
  3. Add paprika, thyme, garlic powder, cayenne, salt, and pepper to the Panko and mix well.
  4. In another bowl, whisk egg whites with salt and pepper until frothy.
  5. Dip each chicken thigh in the egg whites, then dredge in the Panko mixture, pressing to adhere.
  6. Place the coated chicken on the wire rack, spacing them evenly.
  7. Bake in the preheated oven for about 50 minutes until golden brown and cooked through, ensuring the internal temperature reaches 165°F.
