Ingredients

The salad

  • 6 pieces heirloom tomatoes, sliced
  • 8 cups arugula
  • 1 piece red onion, sliced

The steak

  • 2 lbs skirt steak (or flank steak)

The dressing

  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • to taste sea salt and pepper

Instructions

  1. 1. Heat a large skillet over medium heat and season the steak with salt and pepper on both sides.
  2. 2. Cook the steak in the skillet for about 3-4 minutes per side, depending on thickness and preference.
  3. 3. While the steak cooks, slice the tomatoes and onion.
  4. 4. Once cooked, let the steak rest for a few minutes before slicing it against the grain into small strips.
  5. 5. Assemble the salad by placing the sliced tomatoes and arugula on a plate, topping with sliced steak, and drizzling with olive oil and balsamic vinegar.
  6. 6. Add additional salt and pepper if desired.
