Instructions
- Preheat the oven to 400°F.
- Grate the zucchini and squeeze out excess liquid using a tea towel.
- In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, parmesan cheese, cheddar cheese, parsley, chives, eggs, salt, and pepper.
- Line a sheet pan with parchment paper and scoop small amounts of the mixture onto the pan, shaping them into nugget-sized bites.
- Bake for 20-22 minutes until golden brown and crispy.
- Serve with marinara sauce or ranch dressing.
