Instructions
- Crisp the bacon in a large pot and remove it to drain.
- Sear the cubed meat until no longer pink, then add onions, jalapeños, red pepper, garlic, and chili powder, cooking until the onions are wilted.
- Add cumin, oregano, salt, pepper, cayenne, and cinnamon, cooking until fragrant.
- Stir in the tomatoes and cook for one minute.
- Deglaze the pan with beer and tequila, then add bacon, chipotle chiles, adobo sauce, beef stock, and coffee, bringing to a boil.
- Reduce heat and simmer partially covered for 2 to 3 hours until the meat is tender.
- Add masa harina gradually to thicken the chili to desired consistency.
- Stir in dark chocolate until melted, then add black beans and lime juice, cooking for an additional 20 to 30 minutes.
- Adjust seasonings and skim any fat before serving.
- Serve with toppings like cornbread, yogurt, cilantro, cheese, and avocado.
