Ingredients

The chili

  • 4 slices bacon
  • 3 pounds tri-tip
  • 1 medium onion
  • 3 leaves jalapeños
  • 1 medium red pepper
  • 4 cloves garlic
  • 6 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • ½ teaspoon cayenne pepper
  • teaspoon cinnamon
  • 14 ounces fire roasted diced tomatoes
  • 12 ounces Lone Star Beer
  • 1 cup unsweetened coffee
  • 2 ounces tequila
  • 3 whole chipotle chiles in adobo
  • 4-5 cups beef broth
  • ¼ cup masa harina
  • 1 ounce dark chocolate
  • 2 cups cooked black beans
  • 2 limes juiced

Toppings

  • to taste cornbread
  • to taste greek yogurt or sour cream
  • to taste fresh cilantro
  • to taste sharp grated cheddar cheese
  • to taste diced avocado

Instructions

  1. Crisp the bacon in a large pot and remove it to drain.
  2. Sear the cubed meat until no longer pink, then add onions, jalapeños, red pepper, garlic, and chili powder, cooking until the onions are wilted.
  3. Add cumin, oregano, salt, pepper, cayenne, and cinnamon, cooking until fragrant.
  4. Stir in the tomatoes and cook for one minute.
  5. Deglaze the pan with beer and tequila, then add bacon, chipotle chiles, adobo sauce, beef stock, and coffee, bringing to a boil.
  6. Reduce heat and simmer partially covered for 2 to 3 hours until the meat is tender.
  7. Add masa harina gradually to thicken the chili to desired consistency.
  8. Stir in dark chocolate until melted, then add black beans and lime juice, cooking for an additional 20 to 30 minutes.
  9. Adjust seasonings and skim any fat before serving.
  10. Serve with toppings like cornbread, yogurt, cilantro, cheese, and avocado.
