Ingredients

The base

  • 1 tablespoon extra-virgin olive oil
  • 1 medium white onion, chopped
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 3 cups cooked black beans
  • 1 cup black bean cooking liquid
  • 1 14-ounce can diced fire-roasted tomatoes
  • 1 4-ounce can green chiles

The spices and seasonings

  • 3 tablespoons chili powder
  • 1 teaspoon maple syrup
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon cayenne pepper (optional)
  • teaspoons sea salt
  • to taste black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, red bell pepper, and salt; cook until the onion is translucent.
  3. Stir in the garlic and chili powder, cooking until fragrant.
  4. Add the black beans, their cooking liquid, tomatoes, green chiles, and maple syrup; stir to combine.
  5. Reduce heat to low and simmer uncovered for 20 minutes until thickened.
  6. Stir in lime juice and adjust seasoning with salt, pepper, and cayenne if desired.
  7. Serve with lime wedges and your favorite toppings.
