Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, red bell pepper, and salt; cook until the onion is translucent.

- Add the black beans, their cooking liquid, tomatoes, green chiles, and maple syrup; stir to combine.
- Reduce heat to low and simmer uncovered for 20 minutes until thickened.
- Stir in lime juice and adjust seasoning with salt, pepper, and cayenne if desired.
