Ingredients

The base

  • 2 teaspoons light olive oil
  • 1 lb lean ground beef or turkey
  • 1 small onion, diced (about 1 cup)
  • 2 tablespoons dried oregano
  • 1 teaspoon kosher salt
  • 1 to 2 teaspoons ground cumin
  • 2 stalks celery, diced (about 1 cup)
  • 1 large bell pepper, diced
  • 1 jalapeño pepper, deseeded and diced
  • 2 teaspoons minced garlic (1 to 2 cloves)
  • 4.5 ounces canned chopped green chile peppers, drained (about ⅓ cup chopped)
  • 1 28-ounce can crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground black pepper
  • ½ teaspoon smoked paprika
  • 1 leaf bay leaf

Optional garnishes

  • to taste lime wedges
  • to taste chopped fresh cilantro
  • to taste avocado slices
  • to taste shredded cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat and brown the ground meat for 4 to 5 minutes.
  2. Remove the cooked meat from the pot and set aside, leaving some oil in the pot.
  3. Add diced onion to the pot, season with oregano, salt, and cumin, and cook until tender.
  4. Mix in celery, bell pepper, jalapeño, and garlic, then add the drained green chile peppers and cooked meat.
  5. Stir in crushed tomatoes, tomato paste, chili powder, black pepper, and smoked paprika.
  6. Bring to a boil, then reduce heat, add the bay leaf, and simmer for about 25 minutes.
  7. Remove the bay leaf, adjust seasonings if needed, and serve with optional garnishes.
