Instructions
- Heat the olive oil in a large pot over medium heat and brown the ground meat for 4 to 5 minutes.
- Remove the cooked meat from the pot and set aside, leaving some oil in the pot.
- Add diced onion to the pot, season with oregano, salt, and cumin, and cook until tender.
- Mix in celery, bell pepper, jalapeño, and garlic, then add the drained green chile peppers and cooked meat.
- Stir in crushed tomatoes, tomato paste, chili powder, black pepper, and smoked paprika.
- Bring to a boil, then reduce heat, add the bay leaf, and simmer for about 25 minutes.
- Remove the bay leaf, adjust seasonings if needed, and serve with optional garnishes.
