Instructions
- Cook the bacon in a frying pan until done but not crisp, then set aside and reserve some fat.
- In the same pan, cook the onions until translucent, then add spices and cook for about a minute before adding to the slow cooker.
- Brown the ground beef in the pan, then add garlic and cook until fragrant before transferring to the slow cooker.
- Add green chiles, beef broth, and tomato sauce to the slow cooker and stir well.
- Incorporate crushed tomatoes, beef bouillon, cocoa powder, and all beans into the slow cooker and stir.
- Cover and cook on Low for 5-6 hours or High for 3 hours.
- In the last hour, add corn and cooked bacon to the slow cooker.
- Adjust thickness with more broth or water if needed, and taste to adjust spices.
- Garnish as desired and serve.
