Ingredients

The base

  • 1 tablespoon olive oil
  • 2 cups sweet onion, finely chopped
  • 1 tablespoon garlic, finely minced
  • 1 lb ground beef, lean

The tomatoes

  • 28 oz tomato puree
  • 28 oz diced tomatoes
  • 28 oz crushed tomatoes

The beans and corn

  • 15 oz black beans, drained and rinsed
  • 15 oz kidney beans, drained and rinsed
  • 15 oz pink beans, drained and rinsed
  • 15 oz corn, canned or frozen, drained and rinsed

The seasonings

  • 2 teaspoons chili powder
  • 2 teaspoons black pepper
  • 2 teaspoons cumin
  • 1 teaspoon table salt
  • 2 pieces bay leaves

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onions and garlic, cooking until the onions are tender.
  3. Add ground beef and cook until browned, breaking it into small pieces.
  4. Set the slow cooker to low for 6 hours.
  5. Add tomato puree, diced tomatoes, and crushed tomatoes to the slow cooker and stir.
  6. Add the drained and rinsed beans and corn, stirring to combine.
  7. Add chili powder, cumin, black pepper, salt, and bay leaves, stirring to mix.
  8. Add the cooked ground beef mixture to the slow cooker and stir.
  9. Cover and let cook for 6 hours, stirring as needed.
  10. Serve with your favorite toppings.
