Ingredients

Chili Seasoning

  • ¼ cup chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 1-2 teaspoons chipotle chili powder
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Chili Ingredients

  • 8 slices bacon
  • 4 pounds boneless beef chuck roast
  • 1 large onion
  • 2 cans (14.5 ounces each) fire-roasted diced tomatoes with green chiles
  • 2 cups chicken broth or water
  • 1 can (15 ounces) kidney beans
  • 8 cloves garlic

Toppings

  • to taste shredded cheese
  • to taste sour cream
  • to taste thinly sliced scallions
  • to taste fresh cilantro
  • to taste corn chips

Instructions

  1. Whisk together the chili seasoning ingredients in a small bowl.
  2. Fry the bacon in a Dutch oven until crisp, then crumble it and reserve the fat.
  3. Season the beef steaks with salt and pepper, and fry in the reserved bacon fat until browned.
  4. Cut the browned beef into cubes and transfer to the slow cooker.
  5. Sauté the onion in the same pan until softened, then add to the slow cooker.
  6. Add the crumbled bacon, tomatoes, chicken broth or water, beans, garlic, and chili seasoning to the slow cooker.
  7. Cover and cook on LOW for 8 to 10 hours or HIGH for 4 to 5 hours until the beef is tender.
  8. Shred the beef and season to taste before serving with toppings.
