Ingredients

The base

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 4 cloves garlic, chopped
  • ½ teaspoon kosher salt
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 tablespoon tomato paste
  • 1 chipotle chili in adobo, coarsely chopped, with sauce

The protein and beans

  • 1 pound grass-fed ground beef
  • 1 14.5 ounce can low-sodium chicken broth
  • 1 14.5 ounce can diced tomatoes
  • 1 14.5 ounce can kidney beans, rinsed and drained
  • 1 14.5 ounce can pinto beans

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté onion, bell pepper, garlic, salt, chili powder, and oregano for 3-5 minutes until fragrant.
  3. Stir in tomato paste and chipotle chili with sauce, cooking for another minute.
  4. Add ground beef, breaking it up, and cook until browned (about 5 minutes).
  5. Pour in broth and simmer for about 10 minutes.
  6. Stir in diced tomatoes and beans, bring to a boil, and cook uncovered for about 10 minutes until thick.
  7. Ladle chili into bowls and serve with your favorite toppings.
