Instructions
- Heat olive oil in a large pot over medium-high heat.
- Sauté onion, bell pepper, garlic, salt, chili powder, and oregano for 3-5 minutes until fragrant.
- Stir in tomato paste and chipotle chili with sauce, cooking for another minute.
- Add ground beef, breaking it up, and cook until browned (about 5 minutes).
- Pour in broth and simmer for about 10 minutes.
- Stir in diced tomatoes and beans, bring to a boil, and cook uncovered for about 10 minutes until thick.
- Ladle chili into bowls and serve with your favorite toppings.
