Ingredients

The Beef

  • ½ lb. ground beef
  • ½ tsp dried oregano
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp salt

The Bowls

  • 4 cups cooked rice
  • 1 cup hummus
  • 1 pint grape tomatoes
  • ½ English cucumber
  • ¼ red onion
  • 1 cup kalamata olives
  • 2 oz. crumbled feta
  • 1 handful fresh parsley, chopped

Instructions

  1. Cook the ground beef with oregano, cumin, garlic powder, and salt in a skillet over medium heat until browned.
  2. Prepare the toppings while the beef cooks.
  3. In each bowl, add 1 cup of rice and ¼ cup of hummus.
  4. Divide the remaining ingredients among the bowls as desired.
  5. Serve immediately or refrigerate for later.
