Greek Bowls

Ingredients

The rice

  • 3 tbsp olive oil
  • 1 small yellow onion, diced
  • tsp ground turmeric
  • ¾ tsp curry powder
  • ¾ tsp kosher salt
  • 3 cups chicken or vegetable broth
  • cups basmati or jasmine rice

The meatballs

  • 700-800 g lean ground beef
  • 2 tsp salt
  • ½ tsp pepper
  • 6 cloves garlic, pressed
  • 2 tbsp dried oregano
  • 1 large egg
  • 1 cup breadcrumbs
  • 1 yellow onion, grated
  • 2 tbsp olive oil

The toppings

  • 1 cup crumbled feta cheese
  • 1 cup tzatziki
  • 1 cup pickled red onions
  • 1 pint baby tomatoes, halved
  • ½ cup hummus
  • 1 cup black olives
  • 1 green pepper, sliced thin
  • 6 pieces pitas
  • 6 pieces lemon wedges
  • to taste fresh herbs for garnish (dill, mint and/or parsley)

Instructions

  1. Prepare the turmeric rice by heating olive oil in a pot, adding diced onion, and cooking until softened.
  2. Stir in turmeric, curry powder, and salt, then add the rice and coat it well.
  3. Add broth, bring to a simmer, then reduce heat and cook until rice is tender and liquid is absorbed.
  4. Fluff the rice and let it sit covered for 10 minutes.
  5. Preheat the oven to 400°F and prepare a baking sheet.
  6. Mix ground beef with salt, pepper, garlic, oregano, egg, breadcrumbs, grated onion, and olive oil to form meatballs.
  7. Shape the mixture into 20-22 meatballs and bake for 24-26 minutes until cooked through.
  8. Assemble meal prep containers by layering rice and meatballs, then add toppings evenly.
