Instructions
- Prepare the turmeric rice by heating olive oil in a pot, adding diced onion, and cooking until softened.
- Stir in turmeric, curry powder, and salt, then add the rice and coat it well.
- Add broth, bring to a simmer, then reduce heat and cook until rice is tender and liquid is absorbed.
- Fluff the rice and let it sit covered for 10 minutes.
- Preheat the oven to 400°F and prepare a baking sheet.
- Mix ground beef with salt, pepper, garlic, oregano, egg, breadcrumbs, grated onion, and olive oil to form meatballs.
- Shape the mixture into 20-22 meatballs and bake for 24-26 minutes until cooked through.
- Assemble meal prep containers by layering rice and meatballs, then add toppings evenly.
