Instructions
- Combine ground turkey, red onion, garlic, oregano, spinach, salt, and pepper in a large bowl and mix until combined.
- Form the mixture into approximately 12 meatballs, each about 1 inch in size.
- Heat grape seed oil in a skillet over medium-high heat and cook the meatballs for 3-4 minutes on each side until browned.
- In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to create the tzatziki sauce.
- In meal prep containers, portion out ½ cup of cooked rice, 3 meatballs, ¼ cup of tomatoes, ¼ cup of cucumber, and divide the onions evenly.
- Top with tzatziki sauce when ready to serve.
