Ingredients

The grain

  • 2 cups cooked brown rice

The meatballs

  • 1 lb. ground turkey
  • ¼ cup finely diced red onion
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 cup chopped fresh spinach
  • to taste salt & pepper
  • 2 tablespoons grape seed oil

The tzatziki sauce

  • ½ cup plain Greek yogurt
  • ¼ cup grated cucumber
  • 1 tablespoon lemon juice
  • ½ teaspoon dry dill
  • ½ teaspoon garlic powder
  • to taste salt

The toppings

  • ½ cup thinly sliced red onion
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • cup sliced red onion

Instructions

  1. Combine ground turkey, red onion, garlic, oregano, spinach, salt, and pepper in a large bowl and mix until combined.
  2. Form the mixture into approximately 12 meatballs, each about 1 inch in size.
  3. Heat grape seed oil in a skillet over medium-high heat and cook the meatballs for 3-4 minutes on each side until browned.
  4. In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to create the tzatziki sauce.
  5. In meal prep containers, portion out ½ cup of cooked rice, 3 meatballs, ¼ cup of tomatoes, ¼ cup of cucumber, and divide the onions evenly.
  6. Top with tzatziki sauce when ready to serve.
