Ingredients

Garlic Dill Yogurt Sauce

  • 1 cup full-fat plain yogurt
  • 1 Tbsp lemon juice
  • ¼ tsp garlic powder
  • ¼ tsp dried dill
  • ¼ tsp salt

Ground Turkey

  • 1 Tbsp olive oil
  • 1 lb. ground turkey
  • 2 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp freshly cracked pepper

Bowls

  • 1 cup uncooked rice
  • 1 pint grape tomatoes
  • 1 count cucumber
  • ¼ count red onion
  • ¼ cup chopped parsley

Instructions

  1. Prepare the garlic dill yogurt sauce by mixing yogurt, lemon juice, garlic powder, dill, and salt in a bowl and refrigerate.
  2. Cook the rice according to your preferred method.
  3. In a skillet, heat olive oil and cook the ground turkey until almost done, then add minced garlic, oregano, salt, and pepper, cooking until fully done.
  4. Prepare the vegetables by slicing the grape tomatoes, chopping the cucumber, slicing the red onion, and chopping the parsley.
  5. Assemble the bowls by dividing rice, turkey, tomatoes, cucumber, onion, and parsley among four bowls.
  6. Drizzle the yogurt sauce over the bowls just before serving.
