Ingredients

  • 16 ounces ground lamb
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon dried rosemary
  • 1 tablespoon lemon juice
  • 3 cups cooked quinoa
  • 1 medium red onion, chopped
  • 1 tomato, chopped
  • 1 cucumber, sliced
  • 4 ounces feta cheese, crumbled
  • to taste Tzatziki sauce for topping

Instructions

  1. 1. Heat a large skillet over medium heat and spray with cooking spray.
  2. 2. Add ground lamb, cumin, oregano, red pepper flakes, and rosemary to the skillet.
  3. 3. Cook the mixture until the lamb is browned, stirring often.
  4. 4. Remove from heat and stir in lemon juice.
  5. 5. Divide cooked quinoa among bowls.
  6. 6. Top the quinoa with the lamb mixture, red onion, tomato, cucumber, and feta.
  7. 7. Drizzle with tzatziki sauce and garnish with parsley.
