Instructions
- 1. Heat a large skillet over medium heat and spray with cooking spray.
- 2. Add ground lamb, cumin, oregano, red pepper flakes, and rosemary to the skillet.
- 3. Cook the mixture until the lamb is browned, stirring often.
- 4. Remove from heat and stir in lemon juice.
- 5. Divide cooked quinoa among bowls.
- 6. Top the quinoa with the lamb mixture, red onion, tomato, cucumber, and feta.
- 7. Drizzle with tzatziki sauce and garnish with parsley.
