Instructions
- Prepare the Tzatziki sauce by mixing all ingredients in a bowl and adjusting seasoning to taste.
- Make the mint pesto by blending mint, spinach, nuts, garlic, lemon, salt, and pepper in a food processor, adding olive oil until desired consistency is reached.
- Preheat a grill or grill pan to medium-high heat. Combine all meatball ingredients in a bowl and mix well.
- Form the mixture into meatballs and place them on a plate, then spritz with cooking spray.
- Grill the meatballs for about 8-10 minutes, turning occasionally, until cooked through.
- Alternatively, roast the meatballs in a 375°F oven for 13-18 minutes.
- To serve, place meatballs in toasted pita, drizzle with Tzatziki and mint pesto, and top with cucumber, feta, and cilantro.
