Instructions
- Combine ground turkey, red onion, garlic, oregano, spinach, salt, and pepper in a bowl and mix until well combined.
- Form the mixture into approximately 12 meatballs, each about 1 inch in diameter.
- Heat avocado oil in a skillet over medium-high heat and cook the meatballs for 3 to 4 minutes on each side until browned and cooked through.
- In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to make the tzatziki sauce.
- Warm the flatbreads or pita, then assemble each gyro by adding 3 meatballs, sliced red onion, diced tomato, and cucumber, and top with tzatziki sauce.
