Ingredients

Meatballs

  • 1 lb ground turkey
  • ¼ cup finely diced red onion
  • 2 cloves garlic
  • 1 teaspoon dry oregano
  • cup chopped fresh spinach
  • to taste salt & pepper
  • 2 tablespoons avocado oil

Tzatziki Sauce

  • 5 oz plain Greek yogurt
  • ¼ cup grated cucumber
  • 2 tablespoons lemon juice
  • ½ teaspoon dry dill
  • ½ teaspoon garlic powder
  • to taste salt

Gyro Components

  • ½ cup thinly sliced red onion
  • 1 cup diced tomato
  • 1 cup diced cucumber
  • 4 whole wheat flatbreads or pita

Instructions

  1. Combine ground turkey, red onion, garlic, oregano, spinach, salt, and pepper in a bowl and mix until well combined.
  2. Form the mixture into approximately 12 meatballs, each about 1 inch in diameter.
  3. Heat avocado oil in a skillet over medium-high heat and cook the meatballs for 3 to 4 minutes on each side until browned and cooked through.
  4. In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to make the tzatziki sauce.
  5. Warm the flatbreads or pita, then assemble each gyro by adding 3 meatballs, sliced red onion, diced tomato, and cucumber, and top with tzatziki sauce.
