Ingredients

The meat mixture

  • 1 medium Onion
  • 4 cloves Garlic
  • 1 lb Ground lamb
  • 1 lb Ground beef

The seasonings

  • 1 tbsp Dried oregano
  • 2 tsp Dried marjoram
  • 2 tsp Dried thyme
  • 2 tsp Dried rosemary
  • 1 tsp Cumin
  • 2 tsp Sea salt
  • ½ tsp Black pepper

Instructions

  1. Preheat the oven to 300°F (148°C) and line a loaf pan with parchment paper or foil.
  2. Puree garlic and onion in a food processor until smooth.
  3. Strain the onion mixture using a kitchen towel to remove excess liquid.
  4. Add the ground lamb, ground beef, herbs, salt, and pepper to the food processor and process until a paste forms.
  5. Transfer the meat mixture to the loaf pan and compact it tightly.
  6. Bake for 45-55 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven, drain the fat, cover with foil, and let it rest until it reaches 175°F (79°C).
  8. Cool completely, then refrigerate for 2-3 hours.
  9. Slice the cooled meat thinly.
  10. Pan fry the slices in a nonstick skillet until browned and crispy.
