Greek Gyro Meat

Ingredients

  • 1 lb lean ground beef
  • 1 lb ground lamb
  • 2 cups breadcrumbs
  • 1 medium white onion, grated
  • 4 cloves garlic, pressed
  • 3 tsp salt
  • 1 tsp pepper
  • 1 tbsp dried oregano
  • 2 tsp cumin
  • 1 small tomato, grated
  • 4 tbsp avocado oil
  • 2 tbsp red wine vinegar
  • 2 tbsp plain Greek yogurt

Instructions

  1. Preheat the oven to 400°F.
  2. Mix all ingredients together in a large bowl until well combined.
  3. Prepare a vertical spit or use an onion half as a base with skewers.
  4. Form the meat mixture around the spit, creating a stand-up shape.
  5. Wrap the meat with tin foil to create a collar and secure it.
  6. Bake for 45 minutes, then remove the foil and baste with pan juices.
  7. Continue baking for another 30-45 minutes until the internal temperature reaches 160°F.
  8. Let the meat cool for 30 minutes before slicing.
