Instructions
- Combine garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, salt, and pepper in a bowl and whisk well.
- Add beef pieces to the marinade, mix to coat, cover, and refrigerate for about 1 hour.
- Prepare tzatziki sauce by shredding cucumber, tossing it with salt, and letting it sit to drain excess liquid.
- In another bowl, combine yogurt, drained cucumber, lemon juice, dill, garlic, and white wine vinegar. Season with salt and pepper, drizzle with olive oil, and refrigerate for at least 30 minutes.
- Preheat oven to 400°F. Coat a baking dish with oil, arrange beef in a single layer, cover with parchment paper, and bake for 12 to 18 minutes until the beef reaches 140°F.
- Let the beef rest for 5 minutes, then slice or chop it.
- Serve the beef on pita bread with tzatziki sauce, feta cheese, tomatoes, red onion, and fresh dill.
