Beef Gyro

Ingredients

The beef marinade

  • 2 teaspoons garlic, minced
  • 2-3 tablespoons lemon juice, freshly squeezed
  • 2 teaspoons red wine vinegar
  • 2 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon dried oregano
  • to taste salt and freshly ground black pepper
  • 1 ¼ pounds beef flank steak

The tzatziki sauce

  • 1 medium cucumber, peeled
  • 1 cup plain Greek yogurt
  • to taste salt and freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh dill
  • 1 teaspoon garlic, minced
  • 1 teaspoon white wine vinegar
  • to taste olive oil

For serving

  • as needed pita bread
  • as needed feta cheese, cubed
  • as needed tomatoes, chopped
  • as needed red onion, thinly sliced

Instructions

  1. Combine garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, salt, and pepper in a bowl and whisk well.
  2. Add beef pieces to the marinade, mix to coat, cover, and refrigerate for about 1 hour.
  3. Prepare tzatziki sauce by shredding cucumber, tossing it with salt, and letting it sit to drain excess liquid.
  4. In another bowl, combine yogurt, drained cucumber, lemon juice, dill, garlic, and white wine vinegar. Season with salt and pepper, drizzle with olive oil, and refrigerate for at least 30 minutes.
  5. Preheat oven to 400°F. Coat a baking dish with oil, arrange beef in a single layer, cover with parchment paper, and bake for 12 to 18 minutes until the beef reaches 140°F.
  6. Let the beef rest for 5 minutes, then slice or chop it.
  7. Serve the beef on pita bread with tzatziki sauce, feta cheese, tomatoes, red onion, and fresh dill.
