Ingredients

Tzatziki Sauce

  • 1 unit Persian cucumber, finely grated
  • ¼ unit shallot, peeled and minced
  • 1 cup Greek yogurt
  • ½ unit lemon juice
  • ¼ cup minced Italian parsley
  • ¼ cup minced fresh dill
  • to taste unit Kosher salt

Tomato Salad

  • ½ pint cherry tomatoes
  • 2 tablespoons minced Italian parsley
  • 1 unit Persian cucumber, finely diced
  • ½ unit lemon juice
  • to taste unit Kosher salt

Steak

  • pounds New Zealand Grass-fed Flank Steak
  • to taste unit Kosher salt
  • ¼ cup olive oil or neutral oil

For Serving

  • to taste unit Pitas
  • to taste unit Lemons
  • to taste unit Flaky sea salt, as garnish
  • to taste unit Thinly sliced red onion, as garnish
  • to taste unit Dill, as garnish

Instructions

  1. Make the tzatziki sauce by mixing the grated cucumber, shallot, Greek yogurt, lemon juice, herbs, and salt. Adjust salt to taste.
  2. Prepare the tomato salad by mixing cherry tomatoes, parsley, cucumber, lemon juice, and salt.
  3. Bring the flank steak to room temperature and season with salt and olive oil.
  4. Preheat the grill to high heat and grill the steak for about 5 to 6 minutes per side, until it reaches 140° F for medium.
  5. Remove the steak from the grill and let it rest for about 10 minutes.
  6. Warm the pitas until soft and pliable.
  7. Assemble the gyros by spreading tzatziki sauce in the pita, adding tomato salad, sliced steak, red onion, and dill.
