Instructions
- Make the tzatziki sauce by mixing the grated cucumber, shallot, Greek yogurt, lemon juice, herbs, and salt. Adjust salt to taste.
- Prepare the tomato salad by mixing cherry tomatoes, parsley, cucumber, lemon juice, and salt.
- Bring the flank steak to room temperature and season with salt and olive oil.
- Preheat the grill to high heat and grill the steak for about 5 to 6 minutes per side, until it reaches 140° F for medium.
- Remove the steak from the grill and let it rest for about 10 minutes.
- Warm the pitas until soft and pliable.
- Assemble the gyros by spreading tzatziki sauce in the pita, adding tomato salad, sliced steak, red onion, and dill.
